I was reading the SHAPE magazine this morning (free subscription!) & read something interesting!

Next time you pick up some spinach, don’t reach for the bag in the back (which is what I always do!!), A new study in the Journal of Agricultural & Food Chemistry shows that fresh spinach exposed to fluorescent lighting contained up to 100 percent more folate---plus higher levels of lutein and vitamins C, E, and K. “By exposing the leaves to continuous bright light, you stimulate photosynthesis, the process plants use to convert sunlight into energy,” says lead researcher Gene Lester, Ph.D, a USDA scientist. “That increases the level of those five nutrients.” According to Lester, supermarket lighting has the same effect on all leafy greens, so whether you’re shopping for butter lettuce, or red romaine, grab from the front!
